Juicy, Tender, Best Ever Rib Rack

Rack of ostrich ribs on grill

From the pressure cooker to the grill, this juicy rack of ostrich will be a hit.

Ingredients
Ostrich rack of ribs
1 cup olive oil
2 garlic cloves, diced
1 tbsp salt
1 tbsp pepper
1 tbsp onion powder
1/4 cup liquid smoke
2 cups BBQ sauce
1/2 yellow onion, diced
2 sprigs fresh rosemary
2 sprigs fresh thyme

Basting Brush

Directions

Combine oil, liquid smoke, salt, pepper, garlic, onion powder, diced onion, rosemary, and thyme.  

Cut the rack into smaller cuts, cutting between the bone every 2 bones.

Place rack and combined ingredients into a zip lock bag or marinating pan and allow to marinate 2 hours.

Once marinated, remove from the bag and place your racks in a pressure cooker and cook for 1 hour.

Preheat grill to a low temperature and when the pressure cooker has finished, pull racks out and place on grill.

Using a basting brush, slather one side of the racks with BBQ sauce.  Flip over and BBQ remaining side.  You will only need to keep on the grill 10 minutes or so; 5 minutes per side.

Once BBQ sauce has been heated through, remove racks from the grill and enjoy.
