Rack of Ostrich Ribs

Are you a fan of beef or pork ribs?  Prepare to take your passion to the next level!  This rack of ribs may look familiar, but they are far leaner (almost fat free), and much higher in protein & iron.  While the favor is bold and beef-like, as with all of our other cuts, we find that ostrich rib meat is typically less tender than on other animals and considerably less tender than other ostrich cuts.  For this reason, we recommend slow cooking and the liberal use of a moisturizing marinade. 

This cut is packaged in "racks" of approx. 6" wide (the length of the rib bones) and 10" long in manageable ~3 lb packages.  Our Rack - like all of our meats - is unseasoned, so please do what you do best with your favorite beef, bison, or pork recipe.
