Ostrich fan filet is lean red meat that is low in fat and rich in premium flavor. Ostrich fan filet is extremely tenderâ and the most premium primal muscle cut there is. In order to preserve the purity and cooking versatility our top chefs so highly prize in this particular muscle group, ostrich filets will be packaged whole (not portion-cut). As such, packages will vary in size from 3 to 5 pounds.
