Paleo Ostrich Nachos

Paleo Ostrich Nachos, cooked and plated

These paleo ostrich nachos are the ultimate snack,  game day treat or excellent for an easy, delicious dinner.

Ingredients.

1 pound ground ostrich steak, defrost first.
1/2 yellow onion diced
2 cloves garlic, minced
1 tbsp chili powder
1 tsp cumin
1 tsp garlic powder
1/2 tsp dried oregano
1/2 tsp coriander
1/2 tsp onion powder
1/4 salt
1/4 black pepper
14 oz can fire roasted diced tomatoes
guacamole

sweet potato chips:
3 large sweet potatoes
3 tbsp coconut oil
salt

Procedure:

To make the sweet potato chips preheat oven to 375 degrees. Thinly slice the sweet potatoes using a mandolin or knife. Place sliced potatoes in a bowl and toss with oil and season with salt. Place in a single layer on a baking sheet and bake for 20 minutes, flipping halfway. Watch carefully during the last 10 minutes to make sure they don't burn.

While the sweet potato chips are baking, prepare the ostrich. Heat oil in stovetop pan. Add onion and cook until softened 3-4 minutes. Add ground ostrich and cook 4-5 minutes.

Add garlic, diced tomatoes and spices and mix to combine. Bring to a simmer and turn the heat to low. Simmer, stirring occasionally 15-20 minutes.

Adjust seasoning and remove from heat.

Place chips on plate and top with the ostrich mixture, guacamole, salsa and sliced green onions.
