Resembling petite porterhouse steaks and offering the sumptuous flavor of beef short ribs, these bone-in chops are a perfect blend of taste and sophistication. Sold in packages of three to four 2" chops, with an average package weight of 1 lb (0.75 - 1.25 lbs).

Most cuts will thaw in the refrigerator within 24 hours. Once thawed, use within 5 days. Unused, uncooked portions may be refrozen within 3-4 days of thawing.

Need it faster? Submerge sealed package in cold water. Change the water every 30 minutes until fully thawed, approx. 1-3 hours. Use immediately & do not refreeze.

While not recommended, you may thaw in the microwave using the defrost setting (microwave ovens vary; refer to your model’s user manual). Use immediately and do not refreeze.

Reverse sear for stunning results; bake to just below your desired temperature, then finish with a quick sear in a hot skillet (or a trip to the grill). These chops are also outstanding when slowly braised until the meat simply falls away from the bone. Consider them for a hearty yet wholesome ragu, barbacoa, or stew.

Our ostrich rib chops are sold in packages of three to four 2" chops. We recommend two packages when planning a meal for four or more people, as these chops are bone-in and can vary in size depending on the size of the ostrich.
