Sloppy Joes with Spicy Coleslaw

Our take on this classic, crowd-pleasing sandwich - with a little added kick!

Ingredients - Sloppy Joes
1 pound ground ostrich steak (defrost first)
1 tbsp butter                     
¼ cup red onion diced
½ green bell pepper diced
1 tbsp minced fresh garlic      
2 tbsp tomato paste                      
¼ cup tomato sauce
½ cup ketchup  
2 tbsp butter
2 tbsp brown sugar
2 tsp yellow mustard
2 tsp worcestershire sauce
2 tsp chili powder
Burger buns

Preparation - Sloppy Joes
Add butter to a sauté pan and melt.  Once melted, add 1 pound of thawed ground ostrich and cook thoroughly.  Due to the low-fat content of the ostrich, straining is not necessary!

Add red onion and green bell pepper and cook 2 minutes.  Add the minced garlic, 2 tbsp of tomato paste, 1/4 cup tomato sauce, and 1/2 cup ketchup.  Continue to stir while cooking.

Add brown sugar, yellow mustard, and worcestershire sauce.  If needed, add salt to taste and mix in the chili powder.  

Spread butter onto the insides of bun, toast on a hot griddle to a nice golden brown, and serve up those Slop, Sloppy Joes!

1 cup mayonnaise
½ can chipotle peppers
1 bag of coleslaw cabbage mix - or chop your own with cabbage, carrots, and onions

Preparation - Spicy Coleslaw
In a food processor, mix 1 cup mayonnaise with a ½ can chipotle peppers and blend until the peppers are pureed and the mix is well combined.  Add the remaining 1/2 can and mix if you want to kick up the spice a notch.

Place your coleslaw mix into a bowl, slowly add the chipotle sauce and mix with a cooking spoon until you reach your desired spice level.
